About Prime Steakhouse
Prime Steakhouse opened with Bellagio in 1998 under the direction of Jean-Georges Vongerichten, who remains involved as the consulting chef. The dining room was designed to evoke a 1940s supper club — chocolate-brown walls, blue velvet banquettes, framed vintage menus. The terrace, which sits directly above the Fountains of Bellagio, is one of the most-requested restaurant patios on the Strip; every 15-minute fountain show becomes dinner theater. Menu is American-steakhouse with Jean-Georges signatures mixed in — notably the chocolate-glazed short rib that's been on the menu since opening day. Dress code strictly enforced. Patio reservations should be made at least two weeks out for weekend evenings, longer during F1 or NYE weekends.
