About Nobu Las Vegas
Nobu at Caesars Palace opened in 2013 as the first standalone Nobu restaurant in Las Vegas, accompanied by the Nobu Hotel — a tower-within-a-tower concept embedded in Caesars Palace. The restaurant is the larger of the two Nobu operations at Caesars (a second, smaller version exists inside the hotel for guests). Menu is classic Nobu Matsuhisa: Japanese-Peruvian fusion with signatures like black cod miso, yellowtail sashimi with jalapeño, and new-style sashimi. The omakase tasting ($200+) is the deepest dive into the kitchen's range. Reservations essential on weekends. Nobu Hotel guests receive priority booking. The adjacent Nobu Lounge runs cocktails without the reservation pressure.
